Chicken Broccoli Casserole has been a favorite dinner of my family's for many years. I got this recipe from my mother-in-law several years ago, and my children love it when I make this. You will need a 9 x 13 casserole dish for this recipe.
First of all, you need one whole chicken, boiled and deboned. When you have your chicken deboned, set it aside for the time being and heat your oven to 400 degrees. Next, you will need two cans of cream of chicken soup, one 8 ounce jar of Helmans mayonnaise, two packages (8 ounces each) of shredded cheddar cheese, 2-3 large lemons, and one bag of broccoli florets or cut broccoli, whichever you prefer.
Cook your bag of broccoli florets or cut broccoli to your desired tenderness and set aside. Then you're going to mix your two cans of cream of chicken soup and your Helman's mayonnaise together into a big bowl. Take your 2-3 lemons and squeeze all the juice out of them. I find it is much easier to squeeze the juice from the lemons, if first you roll them on the counter to soften them up before juicing them. Add the squeezed lemon juice to your soup and mayonnaise mixture. Take half of one package of the shredded cheese and add that and your deboned chicken to the mixture also. Depending on how cheesy you would like this, you can add more cheese. It just makes this dish better.
Now your going to take your cooked broccoli florets or cut broccoli and spread onto the bottom of the casserole dish. Then you will pour your chicken mixture on top of the broccoli, carefully spreading the mixture until all of the broccoli is covered. Sprinkle the remaining shredded cheddar cheese on top of the chicken mixture. I recommend that you use regular shredded cheddar cheese instead of low fat or 2% shredded cheese. The low fat and 2% shredded cheeses do not melt. Carefully place the casserole into your pre-heated oven and bake until the cheese is melted, bubbly, and slightly browned around the edges of the casserole.
This casserole is terrific by itself, but I like to serve this casserole with homemade mac and cheese, corn and fresh, warm dinner rolls.
